Whole 30: Breakfast, Lunch and Dinner
It’s here! January 1st. Happy New Year everyone! 🙂 Can you believe it? It’s also a Monday. There’s no better way to start a new year than that. 😉
I may be one of the few people that love Mondays. Every day is a fresh start, but there’s just something about Monday that gets me excited to try new habits and start the week off right!
As mentioned in my last post, I started the Whole 30 today! I spent the better part of the morning praying, reading God’s Word, cooking and doing dishes! Recently, many people have asked me for new recipe ideas. I love to cook and I really enjoy looking for new recipes to try and share with others. So, I thought it would be fun to share my meals with you. 🙂 Hopefully, it will inspire you to try something new. 🙂
To keep my breakfasts and lunches simple, I eat pretty much the same things for that week. I do this whether I am on the Whole 30 or not. I like variety, but making something new for breakfast and lunch every day is too much work!
For breakfast this week, I am having 2 eggs with roasted sweet potatoes and half a piece of chicken sausage. I love to eat yellow mustard with the chicken sausage…it’s really good! I roast 1 or 2 sweet potatoes on Monday for the week. This really makes breakfast quick in the morning!
For lunch this week, I am having shepherd’s pie. I love mashed potatoes. We know this. I also love vegetables. The more vegetables, the better. To make this meal Whole 30 compliant, I used vegetable broth and ghee in the mashed potatoes. I used this recipe and adapted it to Whole 30. This is my go to shepherd’s pie recipe!
I also used vegetable broth in the meat mixture. The meat mixture called for several non-compliant Whole 30 ingredients and so I just left them out. It’s so hearty and delicious, you won’t even miss them! 🙂 I think it’s even better the next day. 😉
For dinner tonight, we had lemon herb roasted chicken breast with roasted carrots and broccoli. Eric does not like cooked carrots, so I ate all of them and I made him sauteed mushrooms. 🙂 So delicious and filling.
Tomorrow, I am making a homemade Whole 30 pasta sauce! I love red pasta sauce, so I am always trying new recipes to find the perfect one. Stay tuned. 😉
